Thyme Tortellini

Thyme is a well known herb, although many folks don't cook with the fresh herb.  I love the uniqueness of Thyme, it is a perennial and has a square stem.  Thyme is packed with minerals and vitamins.  Its leaves are one of the richest sources of potassium, iron, calcium and manganese.

Thyme Tortellini makes a great entree or side dish served with salmon or chicken.  It is an simple dish to make that will become a requested favorite!

1 box tortellini filled with cheese 

2 Tbsp olive oil

1 clove garlic

2 Tbsp fresh organic Thyme

½ cup vegetable stock

¼ cup fresh parsley, chopped

¼ cup half & half

½ cup parmesan cheese shredded

1 small tomato diced


Cook tortellini according to directions. In a large sauté pan heat olive oil over medium heat.  Add garlic and sauté for 1 minute.  Add the Thyme, vegetable stock, parsley, and half & half.  Gently stir in tortellini.  Reduce heat to medium low and cook for 5 minutes.  Top with parmesan cheese and tomato.
