Tortellini with Fresh Herbs and Spinach

During this hectic hurried season, many folks are finding their co-workers and friends not feeling so well. I wanted to create a dish that packed a punch of vitamins to ward off the bad guys.

My Tortellini with Herbs & Spinach is delicious and easy to make. Start with 1 box of dried Tortellini cooked al dente. Save 1/4 cup of cooking water. Chop 3 Tbsp fresh Oregano and Parsley. Set aside 1 cup fresh Basil leaves and 1 (10oz) bag spinach leaves.

After draining Totellini, return to pot and place over medium low heat. Add 1/4 cup olive oil, 1/4 cup cooking water stir to slightly mix. Add spinach and herbs. Add a pinch of garlic powder, salt and pepper. Cover the pot so the spinach wilts. Stir occassionally.

After spinach has wilted, place Tortellini in a serving dish and top with parmesan cheese.

The parsley is high in Vitamin C, the Basil is a good source of Vitamin A and the Oregano has 42 times more anti-oxidants than an apple.
