Summer is still with us and a bounty of beautiful herbs and produce are available. If you have time, visit a farmers market. If not, the grocery stores are full of the seasons best.
Cantaloupe is fragrant sweet and so delicious this time of year - and priced right!
This is an easy to make salad that the basil & cantaloupe compliment each other wonderfully!
It's refreshing as an appetizer or asan great accompaniment to chicken and seafood.

Cantaloupe Basil & Mozzarella Salad
10 fresh basil leaves
2 green onions or small bunch of scallions
1 medium cantaloupe, cut into small cubes
1 cup fresh mozzarella balls
¼ cup olive oil
3 Tbsp. red wine vinegar
Juice of one lime
Pinch of salt & pepper
Stack basil leaves top of each other. Using scissors, thinly slice to create ribbons. Thinly slice green onions with scissors. (Using scissors allows the juices to remain). Cut mozzarella balls in quarters. In a large bowl, add basil, green onions and cantaloupe. Lightly toss. Drizzle olive oil, red wine vinegar and lime juice. Add salt and pepper. Toss to blend flavors. Salad can be served immediately or chilled a couple hours.
