Try this healthy delicious recipe that is simple to make. If you don't have fresh Thyme available, fresh Mint is wonderful. Walnuts, garlic and kale are all healthy power houses!

1 lb. spaghetti (whole wheat works great)
1/2 cup walnuts
1/2 cup olive oil
3 cloves garlic, minced
Zest & juice of 1 lemon
1/4 tsp. crushed red pepper flakes
1 bunch kale, de-stemmed and thinly sliced
2 Tbsp. fresh organic Thyme, chopped
Pinch of salt & Pepper
1/2 cup shredded parmesan cheese, plus more for topping
Cook pasta al dente, reserving 1 cup pasta water. In a large skillet over medium heat, add walnuts. Stir frequently and toast about 5 minutes. Remove from skillet and chop. Set aside. In the same large skillet, heat olive oil over medium heat. Add garlic, lemon zest and juice and red pepper flakes. Cook 30 seconds. Add the kale, Thyme, salt and pepper. Stir well to coat kale with olive oil. Cook 2 minutes. Add pasta to the skillet and toss. Add 1/4 cup pasta water to thin sauce. Add 1/2 cup parmesan cheese and walnuts, toss to coat. Add more pasta water if needed to thin. Serve pasta with additional cheese for topping.
