Herbs to Highlight Thanksgiving

What a beautiful day in the South today! Temperatures around 70 degrees, couldn't ask for better weather for our Herbs to Highlight Thanksgiving cooking show. Today I prepared a light Sage vinaigrette for a hearty Fall salad. Next dish was a Potato Kale and Rosemary Gratin. The cooking show was a feature for folks to attend during their lunch hour. The group had fun, sampled a few delicious herb dishes, enjoyed the weather and returned to work. Happy Day!

Carrot & Kale Soup

There is a hint of crispness in the air and on the ground with the fallen leaves. What better time to make a healthy soup to savor. This soup is full of vegetables and Thyme that supply vitamins and anti-oxidants.

The ingredients showcase Fall's colors with carrots, kale, onions and parsnips. Add a dollop of Greek yogurt to add richness. For a heartier bowl of soup, add some small cooked pasta.

Oregano Angel Food Tiramisu

While Summer lingers and the heat makes us look for cool and refreshing things to eat, I decided to make a light tiramisu made with angel food cake instead of lady fingers. I also used Neufchatel cheese for some of the filling which is lighter than mascarpone. This cut down on the prep time and had it in the refrigerator chilling in a hurry.

Adding fresh Oregano to the filling gave it a touch of savoriness! Oregano is one of the culinary herbs rich in antioxidants, substances that protect your cells from damage. It also slows cell deterioration, thus slowing the process of aging. So why not have a slice of light and delicious Angel Food Tiramisu.

Mediterranean Tilapia

Tilapia is a mild fish that is easy to prepare and tastes great. Here I layered lemon slices in a pan, placed Tilapia, a sprinkle of garlic powder and Oregano on top. A nice drizzle of olive oil and into the oven to bake for 20 minutes. Healthy, delicious and simple to make for a week night dinner.

The fresh Oregano is full of anti-oxidants and vitamins and really adds to this dish.

Smashed Oregano Reds

The Oregano in the garden is beautiful. It is flowering and the bees are loving it. Anytime you can attract bees to your garden, be thankful. Lately, there has been a shortage of bees and this has made pollinating fruits and vegetables a problem.

These potatoes were fantastic, not hard to make and the Oregano added that extra level that took them over the top.

Place a dollop of sour cream on top if you like and you're going to smile.
