Tarragon Lemonade

The weekend's here and it's time to relax!  How about a healthy homemade Tarragon Lemonade. Simple to make and oh so refreshing. First, make a simple syrup. In a small saucepan over medium heat, add 1 cup water, 1 sprig Tarragon and 2/3 cup Agave syrup or honey. Heat for 4 minutes to blend flavors. Remove from heat and cool.

To a large pitcher add juice of 6 lemons, 5 cups of cold water and 4 sprigs of Tarragon. Add ice to your favorite glasses and get ready for a great refreshing drink.  Celebrating something fun, this recipe is fantastic with a touch of Gin or Vodka.

Planting seeds can be economical and fun to watch as they sprout and become stronger. Plant cuttings of perrenial Herbs is always fun, this way I can share some Herbs with my friends.

Valentine's Day falls on a Thursday this year, leaving many busy working folks not able to celebrate on the actual day.  Most people have said they will be celebrating Friday night or Saturday this year.  Makes sense!

Shrimp with Mint & Rice Noodles

If you've never cooked rice noodles, you will be surprised at the ease of preparation and the lightness they offer. You don't boil rice noodles, but pour hot water over to soften. They are popular in many Southeast Asian dishes.  They also have less carbs than regular noodles.

I wanted to create a dish similar to favorites I've had in Asian restaurants.  The ingredients are simple and cooks quickly.  Mint was the Herb of choice for this dish.  Mint leaves offered a sweet flavor with a refreshing cool finish.  Mint is readily available and once you have it in your garden, you will never be without!  It is invasive, wants to take over the garden, so keep it under control!

Mint adds a delicious balance to this wonderful dish.

Edamame & Green Beans with Mint

The New Year is a time to feel revitalized! Who wouldn't like to be healthier and share the benefits of eating well with their family and friends. 


This is a simple dish with 3 of my favorites.  The health benefits are second to none. Herbs have a great history with Mint having an enormous family of varieties and types. Mint is known to have originated in Asia and the Mediterranean region. In many cultures, mint symbolized hospitality and was offered as a sign of welcome and friendship to guests as they arrived. In the Middle East mint tea is still served to guests on their arrival.  In ancient Greece, the leaves of mint were rubbed onto the dining table, which was a sign of their warm greeting. I really like this idea, the smell must have been marvelous.

Edamame's are a natural source of antioxidant's and full of protein.  They are easy to cook and very tasty. Take a moment to experiment with them, their versatility is awesome.

Light Herb Lasagna

Looking at the weather today, most of the country is experiencing a dreary cold day.  Even in the South, the temperatures have dipped.  Time for a comforting warming dish.

Lighten your lasagna with low-fat ricotta and part skim mozzarella.  Add spinach, oregano, basil and chives to round out a healthy delicious entree.
