Herbs to Highlight Thanksgiving

Cate MacKrell

What a beautiful day in the South today! Temperatures around 70 degrees, couldn't ask for better weather for our Herbs to Highlight Thanksgiving cooking show. Today I prepared a light Sage vinaigrette for a hearty Fall salad. Next dish was a Potato Kale and Rosemary Gratin. The cooking show was a feature for folks to attend during their lunch hour. The group had fun, sampled a few delicious herb dishes, enjoyed the weather and returned to work. Happy Day!

Pumpkin Lasagna

Cate MacKrell

This delicious and easy to make dish is so comforting. Pumpkin Lasagna has become a Fall favorite. It holds well and can be made ahead and reheated. The pumpkin and cheeses blend beautifully. This is rare that I post an entire recipe on my blog, but I love Halloween and Fall.

Ingredients

1 Tbsp olive oil

1 (8 oz.) white mushrooms, sliced

1 medium onion, chopped

2 can (15 oz.) solid pack pumpkin

1 cup half and half

2 Tbsp fresh organic Sage leaves, chopped

Pinch of salt pepper   No cook lasagna noodles

1 cup reduced fat ricotta cheese

1 cup shredded low fat mozzarella cheese

1 ½ cup shredded parmesan cheese

Directions

Preheat oven to 375°. In a medium sauté pan heat olive oil over medium heat. Add mushrooms and onions. Cook 4 minutes until tender. Set aside. In a large bowl combine pumpkin, half and half, Sage, salt and pepper. Spray baking dish with cooking spray. Spread 1 cup pumpkin sauce in the bottom. Top with 1 layer lasagna noodles, overlapping slightly. Spread 1 cup pumpkin sauce over the noodles. Add ½ mushroom mixture over sauce. Top with ½ cup ricotta (placing small dollops over sauce). Sprinkle with ½ cup mozzarella and ½ parmesan. Repeat layers. Top with noodles and sauce. Cover with foil and bake for 45 minutes. Uncover, sprinkle with ½ parmesan. Bake for 15-20 minutes. Let stand for 15 minutes before cutting.

Smashed Oregano Reds

Cate MacKrell

The Oregano in the garden is beautiful. It is flowering and the bees are loving it. Anytime you can attract bees to your garden, be thankful. Lately, there has been a shortage of bees and this has made pollinating fruits and vegetables a problem.

These potatoes were fantastic, not hard to make and the Oregano added that extra level that took them over the top.

Place a dollop of sour cream on top if you like and you're going to smile.

Herb of the Month

Cate MacKrell

As we approach Memorial Day, take a moment to remember the history of the day. Memorial Day is a day to remember the men & women who died while serving our country. Formerly known as Decoration Day, it originated after the American Civil War to commemorate the Union & Confederate soldiers who died in the Civil War.

I was proud of the herbs that I shipped this week. Beautiful Oregano and Thyme plants that will patriotically welcome the recipients.

Herb of the Month is a natural healthy gift. 1 month, 3 month & 6 month available. The perfect gift for Father's Day and Birthday's.

This gift is welcomed by family, friends and folks who enjoy healthy delicious cooking.

Tarragon Lemonade

Cate MacKrell

The weekend's here and it's time to relax!  How about a healthy homemade Tarragon Lemonade. Simple to make and oh so refreshing. First, make a simple syrup. In a small saucepan over medium heat, add 1 cup water, 1 sprig Tarragon and 2/3 cup Agave syrup or honey. Heat for 4 minutes to blend flavors. Remove from heat and cool.

To a large pitcher add juice of 6 lemons, 5 cups of cold water and 4 sprigs of Tarragon. Add ice to your favorite glasses and get ready for a great refreshing drink.  Celebrating something fun, this recipe is fantastic with a touch of Gin or Vodka.

Happy President's Day

Cate MacKrell

In honor of our forefather's who worked so diligently to make this great country, many had beautiful gardens, even with some Herbs! This dish is simple, healthy and inviting.  Rosemary & Garlic Crusted Pork chops would honor our President's with the very first bite.

In a bowl, mix minced garlic, Rosemary, olive oil, salt & pepper. Push into each chop to adhere. Grill or broil to perfection.

Shrimp with Mint & Rice Noodles

Cate MacKrell

If you've never cooked rice noodles, you will be surprised at the ease of preparation and the lightness they offer. You don't boil rice noodles, but pour hot water over to soften. They are popular in many Southeast Asian dishes.  They also have less carbs than regular noodles.

I wanted to create a dish similar to favorites I've had in Asian restaurants.  The ingredients are simple and cooks quickly.  Mint was the Herb of choice for this dish.  Mint leaves offered a sweet flavor with a refreshing cool finish.  Mint is readily available and once you have it in your garden, you will never be without!  It is invasive, wants to take over the garden, so keep it under control!

Mint adds a delicious balance to this wonderful dish.

Be healthy & enjoy,

Tamara
