Strawberry& Cucumber Salad with Tarragon Vinaigrette

It's that time of year again when the grocery stores are getting huge shipments of strawberry's and selling them at awesome prices. This salad is light, refreshing and can be made in about 20 minutes.

The Tarragon vinaigrette is delicous, even if you're not a fan of Tarragon. Make the vinaigrette in a jar so you can keep the extra in the refrigerator for up to a week. It will be delicious on salads or some steamed green beans.

Tarragon is my favorite Artemisia, the 2014 herb of the year. Fresh Tarragon is one of the highest antioxidant value food sources among the common herbs. It is known to help fight off fatigue and calm the nerves. Give Tarragon a try in your recipes.

Pumpkin Lasagna

This delicious and easy to make dish is so comforting. Pumpkin Lasagna has become a Fall favorite. It holds well and can be made ahead and reheated. The pumpkin and cheeses blend beautifully. This is rare that I post an entire recipe on my blog, but I love Halloween and Fall.




1 Tbsp olive oil

1 (8 oz.) white mushrooms, sliced

1 medium onion, chopped

2 can (15 oz.) solid pack pumpkin

1 cup half and half

2 Tbsp fresh organic Sage leaves, chopped

Pinch of salt pepper   No cook lasagna noodles

1 cup reduced fat ricotta cheese

1 cup shredded low fat mozzarella cheese

1 ½ cup shredded parmesan cheese


Preheat oven to 375°. In a medium sauté pan heat olive oil over medium heat. Add mushrooms and onions. Cook 4 minutes until tender. Set aside. In a large bowl combine pumpkin, half and half, Sage, salt and pepper. Spray baking dish with cooking spray. Spread 1 cup pumpkin sauce in the bottom. Top with 1 layer lasagna noodles, overlapping slightly. Spread 1 cup pumpkin sauce over the noodles. Add ½ mushroom mixture over sauce. Top with ½ cup ricotta (placing small dollops over sauce). Sprinkle with ½ cup mozzarella and ½ parmesan. Repeat layers. Top with noodles and sauce. Cover with foil and bake for 45 minutes. Uncover, sprinkle with ½ parmesan. Bake for 15-20 minutes. Let stand for 15 minutes before cutting.

Lemongrass Crab Legs

The herb of the month for September is Lemongrass. Lemongrass can be grown in the Southern part of the country. Living in the South, I am fortunate to have beautiful Lemongrass.

Lemongrass is valued for both culinary and medicinal benefits. Lemongrass contains beta carotene, an antioxidant which has been found to be useful in healthy cell and tissue growth in the body.

Lemongrass gives you the tempting aroma of lemon without the acidity. It tastes like a delicious subtle lemon.

Today I saw crab legs on sale and decided to make new dish. Adding garlic, ginger and Lemongrass to a large pot to steam the crab legs, the aroma was a wow.

These crab legs were so good, you do not need dipping butter. Give your crab legs a new twist with Lemongrass.

Oregano Angel Food Tiramisu

While Summer lingers and the heat makes us look for cool and refreshing things to eat, I decided to make a light tiramisu made with angel food cake instead of lady fingers. I also used Neufchatel cheese for some of the filling which is lighter than mascarpone. This cut down on the prep time and had it in the refrigerator chilling in a hurry.

Adding fresh Oregano to the filling gave it a touch of savoriness! Oregano is one of the culinary herbs rich in antioxidants, substances that protect your cells from damage. It also slows cell deterioration, thus slowing the process of aging. So why not have a slice of light and delicious Angel Food Tiramisu.

Sage is the organic Herb of the month. Sage is considered one of natures perfect Herbs as it is full of vitamins and anti-oxidants. Sage is a perrenial and pretty easy to grow. It loves warm weather and a good supply of water.
