Fruit & Nut Fall Salad

November is here and we all want to continue eating healthy through the holidays.  Comforting food is wonderful, but a healthy delicous salad with an herb vinaigrette is always welcome at the table.

I love fall salads with fruit and nuts.  A nice blend of mixed greens or a bed of romaine is the perfect base for an herb dressing.  Fresh sage worked well in this recipe with olive oil, champagne vinegar and a touch of mustard.

It may be getting cold out, but there's always room for an organic fresh herb on your kitchen counter to take your recipes to the next level.

Chicken Spiedies

We did a wonderful event at the Garden the other evening called Herbs & Hors d'oeuvres.  All the hors d'oeuvres were herb themed.  So many delicous items, and what a great group of guests!

I have had many folks ask about the Chicken Skewers.  They are Chicken Spiedies and are a regional favorite in only one area of NY.  Mint and vinegar are key ingredients for the marinade.  Marinating at least 24 hours is also key.

Spiedies are always grilled and then folks like to take a slice of Italian bread and remove the chicken to create a sandwich.  Restaurants all serve this special treat and I'm glad I was able to share it with so many folks.

Chicken Spiedies

Ingredients

3 chicken breasts

1/3 cup olive oil

1/4 cup lemon juice

1/4 cup white vinegar

2 cloves garlic, chopped

1/2 cup fresh mint, chopped

1 Tbps. dried parsley

1 Tbps. dried basil

1/2 tsp. dried oregano

1/2 tsp. garlic salt

1/2 tsp. pepper

Directions

Dice chicken breasts into 1" cubes. Whisk all other ingredients together to form marinade. Set some aside for basting or sauce if desired. Add marinade to chicken and refrigerate overnight, stirring occasionally (the acidic nature of the marinade wll 'chemically' cook the meat partially). Thread 5 or so cubes onto metal or soaked bamboo skewers and grill for a few minutes either side, just until meat is firm (remember, they're already partially cooked by the marinade). Place skewers on a fresh Italian bread, grip the meat firmly with the bread and pull out skewers.

Memorial Day Salad

As we prepare for our Memorial Day gatherings, try this healthy patriotic salad.  Quinoa is one of my favorite ancient grains.  It is gluten free and is considered one of nature's perfect foods.

Add some blueberries, strawberries, a touch of olive oil and orange juice to liven this salad. This salad is vegan and works well perfect for a picnic.

This Memorial Day take a moment to remember those who sacrificed for us.  Although Memorial Day is dedicated to those who have passed, it is also fitting to remember our veterans who have served for our country.  Thanks to all the Veterans out there!

Asian Mint Noodle Salad

Ah, the freshness of Spring.  Walking through the herb garden, looking for signs of life, I know Mint will always remind me that Spring has arrived.  The varieties of Mint are endless and always add a freshness to recipes followed by a cool finish.

Today's herb recipe stems from my love of noodle salads.  I wanted to create a recipe that everyone could eat, including those on gluten free diets. For the noodles, I cooked quinoa noodles al dente.  Quinoa spaghetti style noodles are delicious. The dressing was traditional with rice vinegar, sesame oil, garlic, ginger and tamari.

To kick start this salad, I added thinly sliced baby bok choy and beautiful spring radishes. Adding fresh chopped mint cooled the bite of the radishes and rounded out the flavors.  This salad may be served immediately or refrigerated and served later.  It is a great salad to take on picnics being dairy free.

Sorghum Edamame with Thyme Vinaigrette

"What was once old is new again". So the saying goes and oh so true when it comes to ancient grains. Ancient grains are becoming popular again. Most are gluten-free and all are full of vitamins and anti-oxidants.

Quinoa, Millet and Sorghum are just a few of the ancient favorites. For the cooking show, I chose sorghum because I thought it was the least popular. Sorghum originated in Africa and is still a staple in Africa and India. It has more anti-oxidants than blueberries and pomegranates! Sorghum can be popped like popcorn for a healthy snack.

Rounding out this dish is edamames, slivered almonds, green onions and shredded carrots. Shave some fresh parmesan over the salad and drizzle with a Thyme vinaigrette. This is a  delicous salad that can be refrigerated or served at room temperature.

Take some time to try ancient grains in your recipes.

Strawberry& Cucumber Salad with Tarragon Vinaigrette

It's that time of year again when the grocery stores are getting huge shipments of strawberry's and selling them at awesome prices. This salad is light, refreshing and can be made in about 20 minutes.

The Tarragon vinaigrette is delicous, even if you're not a fan of Tarragon. Make the vinaigrette in a jar so you can keep the extra in the refrigerator for up to a week. It will be delicious on salads or some steamed green beans.

Tarragon is my favorite Artemisia, the 2014 herb of the year. Fresh Tarragon is one of the highest antioxidant value food sources among the common herbs. It is known to help fight off fatigue and calm the nerves. Give Tarragon a try in your recipes.

2014 Herb of the Year

The 2014 Herb of the Year is the Artemisias, which is actually a large diverse group of plants rather than one herb. One of the most well-known is Tarragon. French Tarragon is a favorite and I like to be creative when using it in my recipes.

Straying from the common sauces flavored with Tarragon, my favorite way to use Tarragon is in salads and desserts. During 2014 I hope to share many Tarragon recipes with you at the cooking show and on-line.

Tarragon is a delicate herb that is hardy and easy to grow, Celebrate 2014, give it a try today.

Herbs to Highlight Thanksgiving

What a beautiful day in the South today! Temperatures around 70 degrees, couldn't ask for better weather for our Herbs to Highlight Thanksgiving cooking show. Today I prepared a light Sage vinaigrette for a hearty Fall salad. Next dish was a Potato Kale and Rosemary Gratin. The cooking show was a feature for folks to attend during their lunch hour. The group had fun, sampled a few delicious herb dishes, enjoyed the weather and returned to work. Happy Day!
